#Tbt. Throwback to Big Johns. Healthier alternative fast food back in 2004 ~2010. Unique roti recipes with their homemade dhalpuri skin. More grilling and less frying was their goal. Owned by Trinidadian born John Naimes (former general manager at Chefette for 30 years) and managed with June his wife, they were shut down due to unpaid rent. Fun fact; In the 70's John ran a restaurant 'Cococabana' in Fontabelle that eventually formed into Chefette under direction from Assad Haloute. He is known for basically forerunning the roti culture in Barbados. His son Neil followed in his father's footsteps and opened a more casual dining experience in the form of South 7 in Hastings Plaza at the same location where Big Johns Express was located. Really miss their fish sandwiches and DAILY veg rotis. #barbados #oldbarbados #bajanhistory #chefette #bigjohnsbarbados #rotis #bajanfood #throwbackthursday #trinis #goodfood #healthyeating #memoriesenough #curry #caribbeanrestaurants
